You can't wait to scoop up the noodles, blow hard, and take a gulp - well, the taste is from memory.
I still remember when I was a child, when I smelled the aroma of instant noodles, I would drool. There was even a legend among my classmates that workers stayed up late to weave instant noodles.
Why make instant noodles curved? This question has been bothering you.
1. Bending is innate
As an adult, you must have understood by now that instant noodles are not knitted with sweater sticks. After all, in 2020 alone, about 116.6 billion instant noodles will be eaten around the world. Even if the noodle weavers work hard every day, they cannot keep up with the speed of people eating noodles.
So, how are instant noodles produced?
Like ordinary noodles, instant noodles first need to go through the noodle mixing process.
The characteristics of flour play a key role in the quality of instant noodles. Take the protein in flour as an example, the higher the content, the harder the instant noodles, and the darker the color.
In addition to flour and water, salt, edible alkali, compound phosphates, thickeners, emulsifiers and other auxiliary materials are added during the kneading process to improve the quality of instant noodles. The reason why instant noodles are so tender and smooth that we can't stop sucking is largely due to the processing aids such as compound phosphate and guar gum (a thickening agent).
After sufficient kneading and curing, the dough will be repeatedly flattened and eventually turned into a sheet of only a few millimeters thick. Different packages of instant noodles have different thicknesses.
In order to meet the needs of instant brewing, the thickness of the instant noodles in the cup is only about 0.3 mm, while the thickness of the fried instant noodles in the boiled bag is slightly higher, about 1-2 mm.
However, the above steps are not much different from the production process of straight vermicelli noodles. The key to making instant noodles truly bend is the link of cutting strips and folding flowers.
It is first cut into noodles of the same width and then passed through a rectangular shaped guide box. Here, the noodles collide with the front and rear walls of the guide box and start to curl up.
However, this is not enough.
A speed-adjustable "conveyor belt" is placed on the lower part of the forming guide box. The speed of this "conveyor" is only about 1/8-1/6 of the speed at which the noodles are produced. Because of the speed difference, the noodles pile up at the outlet, creating a wavy shape.
2. Why are instant noodles so curved?
When the first instant noodles with chicken soup was invented in 1958, it already had a curved shape. Although the production process has been greatly improved today, most instant noodles still inherit this tradition.
Why bother to bend the instant noodles?
First of all, of course, for the sake of appearance, the unique "perm shape" can make instant noodles stand out among the noodles and make people unforgettable. However, more importantly, it can play a lot of roles in the subsequent production and transportation process.
After being made into a wave shape, the instant noodles need to be put into a rectangular steamer for cooking. This step is to make the noodles from raw to cooked, which is convenient for us to eat later.
If the instant noodles are not "bent", but choose to be "straight-faced", a longer steamer is required under the condition that the production speed remains the same.
The bigger trouble is that the straight noodles side by side tend to stick together when cooking. Friends who have cooked vermicelli should have a deep understanding. When we are below, there will always be so many noodles that are difficult to separate, not easy to cook, and even take a bite and even see the white core in the noodles. In desperation, we only can throw them away.
Instant noodles have almost no such troubles. The curved shape gives enough space between the noodles, which allows the water vapor to move around, and the noodles are not easy to stick while being cooked quickly.
Similarly, in the dehydration and drying process, whether it is fried or air-dried, the voids in the instant noodles allow the water to escape more quickly.
Especially for fried instant noodles, shortening the frying time is beneficial to reduce the inhalation of oil.
Now, the crispy instant noodles are finally being packaged. Compared with straight noodles, the length of instant noodles is shortened by about 2/3, saving a lot of packaging costs. For producers who have to worry about the beef grains in the ingredients, how can they pass up such a good opportunity.
In addition, manufacturers do not have to worry that instant noodles will smash into slag during transportation, resulting in too much loss, because the many curved structures enhance the compression resistance of instant noodles.
